I asked him about the out of the box sharpness. It cut thru paper like a gem. No wonder!I think this knife to be way over priced. I’m 5’2” and have little hands. My husband is a chef and he did lots of research on knives.
This knife doesnt rust? i mean you dont have to be all the time cleaning and drying it like other japanese knives? UX10 is Swedish stainless steel --you definitely don't have to be as careful with this one as most other knives. Sounds like the steel is Swedish; where is the knife assembled? I think the steel is Swedish...hand made in Japan...an extraordinary knife.....need to be cared for....the blade is thin ....it is a professional knife...
